Once again Copenhagen confirms itself as the world capital of haute cuisine thanks to Geranium, a Danish gourmet restaurant, located in Parken, in the heart of the city led by chef Rasmus Kofoed and sommelier Søren Ledet.
The location where the Geranium stands is unusual, on the eighth floor of the Copenhagen stadium with a splendid view of the Fælledparken park, a position that connects directly with the gastronomic vision of Geranium: the large windows of the venue represent a direct connection between the urban fabric and the surrounding nature, and makes it clear through his room, the team and the menu that is proposed.
In 2022, Kofoed made Geranium a meat-free zone, focusing exclusively on local seafood and vegetables from organic and biodynamic farms in Denmark and Scandinavia.
Artistic creations on the “Spring Universe” menu include lightly smoked lumpfish roe with milk, kale and apple and forest mushrooms with beer, smoked egg yolk, pickled hops and rye bread. Each dish is an intricate work of art served on dishes inspired by nature, among the unmissable dishes the razor clam, which reproduces the shell of a razor clam with algae and coal dust … in conclusion a unique cuisine that deserves the trip !
